Introduction

How should I start doing this? I don’t need to0 much thinking and I know how… Values.

In these times values are underestimated by people, they give for granted so many things and they expect to get what they want in return. I don’t need to talk about my values, you are going to see me or talk to me or just reading this post you will start making and idea about me.

I would like to show you about my values through my food, respect – honesty – sharing – love, with every single thing I do in the kitchen, in the garden, with the producers and suppliers will be a reflection of these values. Everyone who participates in this is a part of the same philosophy  of respect of nature as a creator of our food. A flower, a vegetable, a piece of meat even the plates will have their own story, something good to say about them and a good reason to be on the table.

Values are the foundation of this project, if the base of my dream is going to be sustained for this, everything it is going to be in the right direction. I want the people to see that the way I do my craft is the way that I am as a person. Overall I am a human being and through my life experience I have had the opportunity to build those values and now it is time to share them on the table with others.

  1. “There are 60 people who work at Mugaritz. 35 work in the kitchen. The techniques are important but not so important. The products are important but not the most important. But the values? Those are vital. I work with 15 nationalities and I’ve work with them for a long time, but in 2015, I have no idea where they’ll be working, or with what techniques or with what products. The future is unforeseeable. The only thing that remains are the values. Values are fractals. If you are sensitive when you put a flower in a dish, if you are sensitive when you are grilling a cow, you are always sensitive. You aren’t sensitive when you only cooking. You can’t be sensitive from 8 to 9 and then a sonuvabitch.”

Words from Andoni Aduriz. I like the last sentence the most
